Oatmeal Pancakes

While Cooper, at 15 months, is well past the "baby food" stage, I still continue to try to provide him a balanced, nutritious, diet with few to none processed foods, etc. I found this recipe and he absolutely loves it.

Oatmeal Pancakes

1 cup milk (can be soy milk, I've made it with either)
2/3 cup quick oats (not instant)

heat milk and add oats. Cover and set aside 5 minutes

2/3 cup flour (I use whole wheat)
2 TBS brown sugar
1 1/2 tsp baking powder
1/4 tsp salt
1/4 tsp cinnamon

mix dry ingredients, make a well in the center

2 eggs, beaten
2 tsp oil
1/4 tsp vanilla

mix egg, oil & vanilla together

add egg mixture and oats to dry mix and stir well

Optional: 1/2 cup blueberries, fresh or frozen

cook on a hot greased skillet

These things smell like oatmeal cookies when cooking, and have a thick hearty texture. I usually use an ice-cream scoop to ladel out the batter so I have even size pancakes, and the recipe makes about 10. Cooper will easily eat two pancakes for breakfast, and the oatmeal and whole wheat flour keep his tummy filled and satisfied.

The best part about this recipe is that these freeze and reheat really well. On the weekends I often make a double batch and freeze them, so during the week I only have to take two out at a time and pop them in the toaster.
