I am obsessed with my son getting his one green veggie, one orange veggie, and a serving of bean a day. He is one year old and up until about a month ago, it wasn't such a struggle. He has never really liked being fed, but would always tolerate one meal by spoon a day. Now he refuses that one meal : (
So I am trying to hide green veggies in everything, just a little at a time. So far I have made carrot cake muffins with a little grated kale, an omelet with spinach, and I am going to try spinach and cheese quesidilla for lunch.
Any other ideas for sneaking greens into other food? He won't eat *just* greens as finger food.
